Zucchini Fritters Recipe
Zucchini Fritters are a delicious and easy-to-make dish that can be served as an appetizer, side dish, or even a light meal. Ingredients
- 2 medium-sized zucchinis, grated
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 2 cloves garlic, minced
- 2 large eggs, beaten
- Salt and pepper, to taste
- Olive oil, for frying
Cooking Instructions

Place the grated zucchini in a colander and sprinkle with salt. Let sit for 10-15 minutes to allow the excess water to drain out. Squeeze the zucchini to remove any remaining water and transfer to a large mixing bowl.

Add the flour, Parmesan cheese, parsley, dill, garlic, eggs, salt, and pepper to the bowl with the zucchini. Mix well until all ingredients are combined.

Heat a large skillet over medium-high heat and add enough olive oil to coat the bottom of the pan.

Once the oil is hot, use a spoon to drop the zucchini mixture into the pan, forming small fritters. Cook for 2-3 minutes on each side, or until golden brown.

Remove the fritters from the pan and place on a paper towel-lined plate to remove any excess oil.
