Zucchini Fritters Recipe

Zucchini Fritters are a delicious and easy-to-make dish that can be served as an appetizer, side dish, or even a light meal. Growing up, my family always had an abundance of zucchini during the summer months. My mom would often make zucchini bread, but I always preferred her zucchini fritters.   • 2 medium-sized zucchinis, grated
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • Salt and pepper, to taste
  • Olive oil, for frying

Cooking Instructions

  1. Place the grated zucchini in a colander and sprinkle with salt. Let sit for 10-15 minutes to allow the excess water to drain out. Squeeze the zucchini to remove any remaining water and transfer to a large mixing bowl.

  2. Add the flour, Parmesan cheese, parsley, dill, garlic, eggs, salt, and pepper to the bowl with the zucchini. Mix well until all ingredients are combined.

  3. Heat a large skillet over medium-high heat and add enough olive oil to coat the bottom of the pan.

  4. Once the oil is hot, use a spoon to drop the zucchini mixture into the pan, forming small fritters. Cook for 2-3 minutes on each side, or until golden brown.

  5. Remove the fritters from the pan and place on a paper towel-lined plate to remove any excess oil.

  6. Serve the fritters immediately with your choice of dipping sauce.
