Vegan Spinach and Artichoke Dip

Spinach and artichoke dip is a classic appetizer that is loved by many. However, traditional recipes often contain dairy and other non-vegan ingredients. That's why I created this vegan spinach and artichoke dip recipe that is just as delicious as the original, but without the animal products. It's creamy, cheesy, and packed with flavor, making it the perfect party snack or game day treat.

  • 1 cup raw cashews, soaked in water for at least 4 hours
  • 1/2 cup unsweetened almond milk
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can artichoke hearts, drained and chopped
  • 1/2 cup frozen spinach, thawed and squeezed dry
  • Optional: vegan cheese shreds for topping

Cooking Instructions

  1. Preheat the oven to 375°F.
  2. Drain the soaked cashews and add them to a blender or food processor along with the almond milk, nutritional yeast, lemon juice, garlic powder, onion powder, salt, and pepper. Blend until smooth and creamy.
  3. In a mixing bowl, combine the cashew mixture with the chopped artichoke hearts and spinach.
  4. Transfer the mixture to a baking dish and smooth out the top. If desired, sprinkle vegan cheese shreds over the top.
  5. Bake for 20-25 minutes, or until the top is golden brown and the dip is heated through.
  6. Serve hot with tortilla chips, pita bread, or sliced veggies.
