Ingredients
- 1 cup raw cashews, soaked in water for at least 4 hours
- 1/2 cup unsweetened almond milk
- 2 tablespoons nutritional yeast
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can artichoke hearts, drained and chopped
- 1/2 cup frozen spinach, thawed and squeezed dry
- Optional: vegan cheese shreds for topping
Cooking Instructions
- Preheat the oven to 375°F.
- Drain the soaked cashews and add them to a blender or food processor along with the almond milk, nutritional yeast, lemon juice, garlic powder, onion powder, salt, and pepper. Blend until smooth and creamy.
- In a mixing bowl, combine the cashew mixture with the chopped artichoke hearts and spinach.
- Transfer the mixture to a baking dish and smooth out the top. If desired, sprinkle vegan cheese shreds over the top.
- Bake for 20-25 minutes, or until the top is golden brown and the dip is heated through.
- Serve hot with tortilla chips, pita bread, or sliced veggies.
