Sweet Potato Hash

  • 2 tbsp olive oil
  • 4 eggs
  • Fresh parsley, chopped (optional)

Cooking Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the diced sweet potatoes and cook for 8-10 minutes, or until they are tender and slightly browned.
  2. Add the diced onion, red bell pepper, and garlic to the skillet. Cook for an additional 5-7 minutes, or until the vegetables are soft and fragrant.
  3. Sprinkle the smoked paprika, cumin, salt, and black pepper over the vegetables. Stir well to combine.
  4. Use a spoon to create 4 small wells in the sweet potato mixture. Crack an egg into each well.
  5. Cover the skillet and cook for 4-6 minutes, or until the eggs are cooked to your liking.
  6. Sprinkle chopped parsley over the top of the sweet potato hash, if desired.
