Instructions

Step 1: Prepare the Matcha Cake Layers

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.
  2. In a medium bowl, whisk together flour, matcha powder, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. In a small bowl, combine milk and lemon juice, then let it sit for 5 minutes to create a buttermilk substitute.
  6. Alternately add the dry ingredients and buttermilk mixture to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.
  7. Divide the batter evenly between the cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 2: Make the Strawberry Cream Cheese Frosting

  1. In a mixing bowl, beat the cream cheese and butter together until smooth and creamy.
  2. Gradually add the powdered sugar, mixing until fully incorporated.
  3. Stir in the strawberry puree, vanilla extract, and a pinch of salt. Beat until smooth and fluffy.

Step 3: Assemble the Cake

  1. Place one cake layer on a serving plate and spread a generous layer of strawberry cream cheese frosting over the top.
  2. Place the second cake layer on top and frost the entire cake with the remaining frosting.
  3. Decorate with fresh strawberry halves, white chocolate shavings, and a light dusting of matcha powder.
  4. Chill the cake for at least 30 minutes before serving for the best texture.
