Ingredients

  • For the crust:

    • 2 cups of graham cracker crumbs
    • 1/2 cup of melted butter
    • 1/4 cup of granulated sugar
  • For the cheesecake:

    • 3 packs of cream cheese, softened
    • 1 cup of granulated sugar
    • 3 eggs
    • 1 tsp of vanilla extract
    • 1/2 cup of sour cream
    • 1/2 cup of heavy cream
    • 1/4 cup of all-purpose flour
    • 1/4 tsp of salt
  • For the topping:

    • 2 cups of fresh strawberries
    • 1/4 cup of granulated sugar
    • 1 tsp of cornstarch
    • 1/4 cup of water

Cooking Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture onto the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool while you prepare the filling.
  3. In a large mixing bowl, beat the cream cheese until creamy. Gradually add in the sugar, eggs, and vanilla extract, one at a time, until well combined.
  4. Add in the sour cream, heavy cream, flour, and salt, and mix until smooth.
  5. Pour the mixture over the crust, and smooth out the top with a spatula.
  6. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  7. Remove from the oven and let it cool completely.
  8. While the cheesecake is cooling, prepare the topping. In a saucepan, combine the strawberries, sugar, cornstarch, and water. Cook over medium heat until the strawberries are soft and the sauce has thickened.
  9. Pour the strawberry sauce over the cooled cheesecake.
  10. Chill in the refrigerator for at least 3 hours or overnight before serving.
