Strawberry Cheesecake Recipe

For the crust:
- 2 cups of graham cracker crumbs
- 1/2 cup of melted butter
- 1/4 cup of granulated sugar

- 3 packs of cream cheese, softened
- 1 cup of granulated sugar
- 3 eggs
- 1 tsp of vanilla extract
- 1/2 cup of sour cream
- 1/2 cup of heavy cream
- 1/4 cup of all-purpose flour
- 1/4 tsp of salt

For the topping:
- 2 cups of fresh strawberries
- 1/4 cup of granulated sugar
- 1 tsp of cornstarch
- 1/4 cup of water
Cooking Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture onto the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool while you prepare the filling.
- In a large mixing bowl, beat the cream cheese until creamy. Gradually add in the sugar, eggs, and vanilla extract, one at a time, until well combined.
- Add in the sour cream, heavy cream, flour, and salt, and mix until smooth.
- Pour the mixture over the crust, and smooth out the top with a spatula.
- Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Remove from the oven and let it cool completely.
- While the cheesecake is cooling, prepare the topping. In a saucepan, combine the strawberries, sugar, cornstarch, and water. Cook over medium heat until the strawberries are soft and the sauce has thickened.
- Pour the strawberry sauce over the cooled cheesecake.
- Chill in the refrigerator for at least 3 hours or overnight before serving.
