As a child, my mother used to prepare stuffed chicken breasts for special occasions, such as birthdays and holidays. I loved the surprise of biting into a juicy chicken breast and discovering a savory filling inside. When I started cooking for myself, I experimented with different fillings and discovered that spinach and feta cheese was the perfect combination. Not only does it taste delicious, but it's also easy to prepare and makes for an impressive presentation.

  • 1 tablespoon olive oil

  4. Stuff each chicken breast with the spinach and feta mixture, using toothpicks to secure the opening.
  5. Heat the olive oil in a large skillet over medium-high heat.
