Ingredients

  • 24 large white mushrooms
  • 1 tablespoon of olive oil
  • 1/4 cup of diced onion
  • 2 garlic cloves, minced
  • 1/2 cup of frozen spinach, thawed and drained
  • 1/2 cup of canned artichokes, drained and chopped
  • 4 ounces of cream cheese, softened
  • 1/4 cup of sour cream
  • 1/4 cup of grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Cooking Instructions

  1. Preheat the oven to 375°F.
  2. Clean the mushrooms and remove the stems. Set aside.
  3. In a skillet, heat the olive oil over medium-high heat. Add the onions and garlic and sauté for 2-3 minutes, until softened.
  4. Add the spinach and artichokes to the skillet and cook for an additional 2-3 minutes.
  5. In a medium-sized mixing bowl, combine the cream cheese, sour cream, and Parmesan cheese. Add the spinach and artichoke mixture and stir well. Season with salt and pepper to taste.
  6. Stuff the mushroom caps with the spinach and artichoke mixture and place them on a baking sheet.
  7. Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
  8. Garnish with fresh parsley before serving.
