Ingredients

  • 1 pound spaghetti
  • 6 slices of bacon, diced
  • 4 large eggs
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon black pepper
  • Salt, to taste

Cooking Instructions

  1. Cook the spaghetti according to the package instructions. Reserve 1 cup of pasta water before draining the spaghetti.
  2. While the pasta is cooking, fry the bacon in a large skillet over medium heat until crispy. Remove the bacon from the skillet with a slotted spoon and set aside.
  3. In a small bowl, whisk together the eggs, Parmesan cheese, black pepper, and a pinch of salt.
  4. Add the drained spaghetti to the skillet with the bacon grease and toss to coat.
  5. Remove the skillet from the heat and add the egg mixture to the spaghetti, tossing quickly to avoid scrambling the eggs.
  6. If the pasta seems too dry, add some of the reserved pasta water, a little at a time, until the desired consistency is reached.
  7. Add the crispy bacon to the skillet and toss to combine.
  8. Serve hot, garnished with additional Parmesan cheese and black pepper.
