Shrimp and Grits Recipe

Ingredients:

  • 2 tablespoons olive oil

  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup chopped fresh parsley
  • 2 cups water
  • 2 cups milk
  • 1 cup stone-ground grits
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Cooking Instructions:

  1. In a medium bowl, toss the shrimp with the smoked paprika, garlic powder, cayenne pepper, salt, and black pepper until well coated.

  2. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove the shrimp from the skillet and set aside.

  3. In the same skillet, melt the butter over medium heat. Add the garlic and cook for 30 seconds, until fragrant. Add the chicken broth, white wine, and lemon juice, and cook for 2-3 minutes, until the sauce has slightly reduced.

  4. Return the shrimp to the skillet and toss to coat in the sauce. Add the chopped parsley and stir to combine.

  5. In a medium saucepan, bring the water and milk to a boil. Reduce the heat to low and slowly whisk in the grits, salt, and black pepper. Cook the grits, stirring occasionally, for 20-25 minutes, until thick and creamy.

  6. Stir in the Parmesan cheese until melted and well combined.

  7. To serve, spoon the grits into bowls and top with the shrimp and sauce.
