Sheet Pan Sausage and Veggies

- 1lb spicy sausage links
- 2 medium sweet potatoes, peeled and diced
- 1lb brussels sprouts, trimmed and halved

- 1 red onion, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- Preheat oven to 400°F (204°C).
- In a small bowl, mix together olive oil, paprika, garlic powder, onion powder, salt, and pepper.
- On a large baking sheet, spread out diced sweet potatoes, brussels sprouts, bell peppers, chopped red onion, and minced garlic.
- Drizzle the olive oil mixture over the veggies and toss until everything is well coated.
- Add the spicy sausage links to the baking sheet, nestling them amongst the veggies.
- Roast in the preheated oven for 25-30 minutes, or until the sausage is fully cooked and the veggies are tender and slightly charred.
- Remove from the oven and let cool for a few minutes before serving.
