  • 1lb spicy sausage links
  • 2 medium sweet potatoes, peeled and diced
  • 1lb brussels sprouts, trimmed and halved
  • 2 bell peppers, chopped
  • 1 red onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste

Cooking Instructions

  1. Preheat oven to 400°F (204°C).
  2. In a small bowl, mix together olive oil, paprika, garlic powder, onion powder, salt, and pepper.
  3. On a large baking sheet, spread out diced sweet potatoes, brussels sprouts, bell peppers, chopped red onion, and minced garlic.
  4. Drizzle the olive oil mixture over the veggies and toss until everything is well coated.
  5. Add the spicy sausage links to the baking sheet, nestling them amongst the veggies.
  6. Roast in the preheated oven for 25-30 minutes, or until the sausage is fully cooked and the veggies are tender and slightly charred.
  7. Remove from the oven and let cool for a few minutes before serving.
