Roasted Vegetable and Chickpea Salad

Roasted Vegetable and Chickpea Salad is a healthy and nutritious dish that is perfect for lunch or dinner. This salad is a combination of roasted vegetables, chickpeas, and a tangy vinaigrette dressing. It is easy to make, and you can add or substitute ingredients based on your preferences.

As a child, I was a picky eater, and I didn't like vegetables. But as I grew older, I realized the importance of incorporating vegetables into my diet. Roasting vegetables is my favorite way of cooking them because it enhances their natural flavors, and they become crispy on the outside and tender on the inside. I came up with this recipe to make vegetables more appealing and delicious, and it has become a staple in my meal plan.

  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
