Ingredients

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 1 can of chickpeas, drained and rinsed
  • 1/4 cup of olive oil
  • 2 tablespoons of balsamic vinegar
  • 1 teaspoon of honey
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped

Cooking Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, mix the sliced bell peppers, zucchini, and red onion with 2 tablespoons of olive oil, salt, and pepper.
  3. On a baking sheet, spread the vegetables evenly and roast for 20-25 minutes or until they are tender and lightly charred.
  4. In the same bowl, mix the chickpeas with the remaining olive oil and garlic powder.
  5. Add the chickpeas to the baking sheet and roast for an additional 10 minutes.
  6. In a small bowl, whisk together the balsamic vinegar, honey, salt, and pepper.
  7. In a large bowl, combine the roasted vegetables and chickpeas with the vinaigrette dressing.
  8. Garnish with fresh parsley.
