Ingredients

  • 1 cup quinoa, rinsed and drained

  • 1/2 cup finely chopped carrot
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cumin
  • 1/4 cup breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup crumbled feta cheese (optional)

Cooking Instructions

  1. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat and let simmer for 15-20 minutes, or until the liquid is absorbed and the quinoa is tender.
  2. In a skillet over medium heat, sauté the onion, bell pepper, and carrot in olive oil until the vegetables are tender, about 5-7 minutes. Add the garlic and cook for an additional minute.
  3. In a large bowl, combine the cooked quinoa, sautéed vegetables, salt, black pepper, paprika, cumin, breadcrumbs, eggs, and feta cheese (if using). Mix well.
  4. Heat a skillet over medium-high heat and add a little oil. Form the quinoa mixture into patties and place in the skillet. Cook for 3-4 minutes on each side, or until golden brown.
  5. Serve the quinoa veggie burgers on buns with your favorite toppings, such as lettuce, tomato, avocado, or mayo.
