Quinoa Veggie Burger

- 1 cup quinoa, rinsed and drained
- 2 cups vegetable broth

- 1/2 cup finely chopped bell pepper
- 1/2 cup finely chopped carrot
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon cumin
- 1/4 cup breadcrumbs
- 2 eggs, beaten
- 1/2 cup crumbled feta cheese (optional)
- In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat and let simmer for 15-20 minutes, or until the liquid is absorbed and the quinoa is tender.
- In a skillet over medium heat, sauté the onion, bell pepper, and carrot in olive oil until the vegetables are tender, about 5-7 minutes. Add the garlic and cook for an additional minute.
- In a large bowl, combine the cooked quinoa, sautéed vegetables, salt, black pepper, paprika, cumin, breadcrumbs, eggs, and feta cheese (if using). Mix well.
- Heat a skillet over medium-high heat and add a little oil. Form the quinoa mixture into patties and place in the skillet. Cook for 3-4 minutes on each side, or until golden brown.
- Serve the quinoa veggie burgers on buns with your favorite toppings, such as lettuce, tomato, avocado, or mayo.
