Puff Pastry Wrapped Asparagus

- 1 sheet of puff pastry, thawed
- 1 bunch of asparagus, about 20-25 spears
- 1 egg, beaten
- 1 tablespoon olive oil
- Salt and pepper to taste
Preheat your oven to 400°F (200°C).
Rinse the asparagus and trim the woody ends. Then, blanch the asparagus in boiling water for about 2-3 minutes, until it turns bright green. Immediately transfer the asparagus to a bowl of ice water to stop the cooking process. Drain the asparagus and pat dry with a paper towel.
Roll out the puff pastry on a lightly floured surface. Cut it into strips that are about 1 inch wide and 10 inches long.
Brush the puff pastry strips with olive oil. Then, season the asparagus with salt and pepper and wrap one strip of puff pastry around each asparagus spear, starting at the bottom and working your way up to the top. Place them on a baking sheet lined with parchment paper.
Brush the puff pastry with beaten egg. Bake for 15-20 minutes or until the puff pastry is golden brown.
Serve the puff pastry wrapped asparagus warm.
