Paleo Banana Pancakes Recipe

Ingredients:
- 2 ripe bananas, mashed
- 2 large eggs
- 1/2 cup almond flour
- 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- Pinch of salt
- Coconut oil, for cooking
Cooking Instructions:
- In a large mixing bowl, whisk together the mashed bananas and eggs until well combined.
- Add the almond flour, baking powder, cinnamon, and salt to the bowl and stir until a thick batter forms.
- Heat a non-stick skillet or griddle over medium heat and add a small amount of coconut oil.
- Using a 1/4 cup measuring cup, scoop the batter onto the skillet and cook until the edges begin to set and the bottom is golden brown (about 2-3 minutes).
- Using a spatula, flip the pancake and cook for an additional 1-2 minutes on the other side until golden brown.
- Repeat steps 4 and 5 until all the batter has been used.
- Serve the pancakes warm with your favorite toppings, such as fresh fruit, nut butter, or maple syrup.
