  • 3 large ripe tomatoes, chopped
  • 1 large cucumber, chopped
  • 1 small red onion, sliced
  • 1 green bell pepper, chopped
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup crumbled feta cheese
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Cooking Instructions:

  1. In a large bowl, combine the chopped tomatoes, cucumber, red onion, and green bell pepper.
  2. Add the pitted Kalamata olives and crumbled feta cheese.
  3. In a separate bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper.
  4. Pour the dressing over the vegetables and toss to combine.
  5. Serve immediately or chill in the refrigerator until ready to serve.
