Ingredients

  • 1 head of cauliflower, riced
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup frozen peas and carrots
  • 3 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Cooking Instructions

  1. Rinse the cauliflower and cut it into florets. Place the florets into a food processor and pulse until the cauliflower is broken down into small rice-like pieces.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the onion and garlic and sauté for 2-3 minutes until fragrant.
  3. Add the red bell pepper and sauté for another 2-3 minutes until it begins to soften.
  4. Add the frozen peas and carrots and stir-fry for 2-3 minutes until they are heated through.
  5. Push the vegetables to one side of the skillet and add the beaten eggs to the empty space. Scramble the eggs until they are fully cooked.
  6. Mix the eggs with the vegetables and add the cauliflower rice to the skillet. Stir-fry for 5-7 minutes until the cauliflower is tender and lightly browned.
  7. Add the soy sauce, sesame oil, salt, and pepper to the skillet and stir-fry for an additional 2-3 minutes until everything is well combined.
  8. Serve hot and garnish with chopped scallions if desired.
