Cauliflower Fried Rice Recipe

Ingredients
- 1 head of cauliflower, riced
- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup frozen peas and carrots
- 3 eggs, lightly beaten
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Cooking Instructions
- Rinse the cauliflower and cut it into florets. Place the florets into a food processor and pulse until the cauliflower is broken down into small rice-like pieces.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the onion and garlic and sauté for 2-3 minutes until fragrant.
- Add the red bell pepper and sauté for another 2-3 minutes until it begins to soften.
- Add the frozen peas and carrots and stir-fry for 2-3 minutes until they are heated through.
- Push the vegetables to one side of the skillet and add the beaten eggs to the empty space. Scramble the eggs until they are fully cooked.
- Mix the eggs with the vegetables and add the cauliflower rice to the skillet. Stir-fry for 5-7 minutes until the cauliflower is tender and lightly browned.
- Add the soy sauce, sesame oil, salt, and pepper to the skillet and stir-fry for an additional 2-3 minutes until everything is well combined.
- Serve hot and garnish with chopped scallions if desired.
