Carrot Cake Recipe
Carrot cake is a classic dessert that's perfect for any occasion. It's a moist and delicious cake that's filled with shredded carrots and spices, and topped with a creamy cream cheese frosting. This recipe is easy to make and perfect for those who love a sweet and spicy treat.
Growing up, carrot cake was one of my favorite desserts. My mom used to make it for special occasions, and it was always a hit with everyone who tried it. It wasn't until I started baking on my own that I realized how easy it was to make. Now, I love making it for friends and family whenever I get the chance.
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 1/2 cups granulated sugar
- 1 cup vegetable oil
- 4 large eggs
- 3 cups grated carrots (about 6 medium carrots)
- 1 cup chopped walnuts (optional)
For the cream cheese frosting:
- 8 ounces cream cheese, at room temperature
- 1/2 cup unsalted butter, at room temperature
- 3 cups powdered sugar
- 1 teaspoon pure vanilla extract
Cooking Instructions
- Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
- In a large bowl, whisk together the sugar, oil, and eggs until well combined. Add the dry ingredients and mix until just combined.
- Add the grated carrots and chopped walnuts (if using) and mix until well combined.
- Divide the batter evenly between the prepared pans and smooth the tops with a spatula.
- Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let the cakes cool in the pans for 10 minutes, then remove from the pans and cool completely on wire racks.
For the cream cheese frosting:
- In a large bowl, beat the cream cheese and butter together until smooth.
- Add the powdered sugar and vanilla and beat until smooth and creamy.
- Once the cakes have cooled, place one cake layer on a cake stand or serving plate. Spread a layer of frosting over the top of the cake.
- Place the second cake layer on top of the frosting and spread another layer of frosting over the top and sides of the cake.
- Chill the cake in the refrigerator for at least 30 minutes before slicing and serving.
