Carrot Cake Recipe

Carrot cake is a classic dessert that's perfect for any occasion. It's a moist and delicious cake that's filled with shredded carrots and spices, and topped with a creamy cream cheese frosting. This recipe is easy to make and perfect for those who love a sweet and spicy treat.

Growing up, carrot cake was one of my favorite desserts. My mom used to make it for special occasions, and it was always a hit with everyone who tried it. It wasn't until I started baking on my own that I realized how easy it was to make. Now, I love making it for friends and family whenever I get the chance.


  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots (about 6 medium carrots)
  • 1 cup chopped walnuts (optional)

For the cream cheese frosting:

  • 8 ounces cream cheese, at room temperature
  • 1/2 cup unsalted butter, at room temperature
  • 3 cups powdered sugar
  • 1 teaspoon pure vanilla extract

Cooking Instructions

  1. Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. In a large bowl, whisk together the sugar, oil, and eggs until well combined. Add the dry ingredients and mix until just combined.
  4. Add the grated carrots and chopped walnuts (if using) and mix until well combined.
  5. Divide the batter evenly between the prepared pans and smooth the tops with a spatula.
  6. Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then remove from the pans and cool completely on wire racks.

For the cream cheese frosting:

  1. In a large bowl, beat the cream cheese and butter together until smooth.
  2. Add the powdered sugar and vanilla and beat until smooth and creamy.
  3. Once the cakes have cooled, place one cake layer on a cake stand or serving plate. Spread a layer of frosting over the top of the cake.
  4. Place the second cake layer on top of the frosting and spread another layer of frosting over the top and sides of the cake.
  5. Chill the cake in the refrigerator for at least 30 minutes before slicing and serving.
