Carrot Cake with Cream Cheese Frosting

  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Cooking Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, beat the sugar and oil until combined. Add the eggs, one at a time, beating well after each addition.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the grated carrots, walnuts (if using), and raisins (if using).
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes before removing them from the pans and placing them on a wire rack to cool completely.

For the cream cheese frosting:

  1. In a large bowl, beat the cream cheese and butter until fluffy.
  2. Gradually add the powdered sugar, one cup at a time, and beat until well combined.
  3. Stir in the vanilla extract.

To assemble the cake:

  1. Place one cake layer on a serving plate.
  2. Spread a layer of cream cheese frosting over the top of the cake.
  3. Place the second cake layer on top of the frosting.
  4. Spread a layer of frosting over the top of the cake and around the sides.
  5. Serve and enjoy!
