Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 red bell pepper, chopped

- 1 can (4 ounces) chopped green chilies, drained
- 1 can (15 ounces) tomato sauce
- 1/2 cup beef broth
- 1 tablespoon vegetable oil
- 10 flour tortillas
- 2 cups shredded cheddar cheese
Cooking Instructions
- Preheat oven to 375°F.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking up the meat with a wooden spoon.
- Add the onion, red bell pepper, and garlic to the skillet and cook until the vegetables are tender, about 5 minutes.
- Stir in the cumin, chili powder, paprika, green chilies, tomato sauce, and beef broth. Simmer for 10 minutes, stirring occasionally.
- Spoon a small amount of the beef mixture onto the center of each tortilla. Roll up the tortillas and place them seam side down in a 9×13 inch baking dish.
- Pour the remaining beef mixture over the top of the enchiladas and sprinkle with the shredded cheddar cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
