Instructions

Step 1: Prepare the Strawberry Filling

  1. Blend the strawberries, powdered sugar, and lemon juice in a food processor until smooth.
  2. Strain the puree through a fine mesh sieve to remove seeds and set aside.

Step 2: Prepare the Lava Cake Batter

  1. Preheat your oven to 425°F (218°C) and grease four ramekins with butter and dust with cocoa powder.
  2. Melt the dark chocolate and butter together in a heatproof bowl over a double boiler, stirring until smooth.
  3. In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until light and slightly thickened.
  4. Gently fold in the melted chocolate mixture, followed by flour, cocoa powder, salt, and vanilla extract. Stir until just combined.

Step 3: Assemble & Bake

  1. Pour half of the batter into the prepared ramekins.
  2. Add 1 tsp of strawberry puree in the center of each ramekin, then top with the remaining batter.
  3. Bake for 10-12 minutes, or until the edges are set but the center is still slightly soft.
  4. Let the cakes rest for 1 minute, then carefully invert them onto serving plates.
